The trick to making a killer pina colada... fresh pineapple. Who knew?I usually stay away from the bars because they charge far too much for drinks, but I have one weakness: pina coladas. Despite much searching and agonizing, I hadn't found a good recipe or pre-mixed pina colada, so I was at the mercy of the bars... until now!
Pina Colada Recipe
1 cup coconut milk (or cream of coconut and skip the sugar)
4 tbsp sugar
1 cup fresh pineapple, cut
1/2 - 3/4 cup rum (I use spiced rum, but it's more conventional to use silver rum)
8 ice cubes
Combine all ingredients in a blender and blend until ice is crushed. Then serve with a slice of pineapple, Reddi wip, and a marischino cherry. Enjoy on a hot summer day!
